Menu Plan Monday

We have a busy week around here so we will be having a lot of "easy" meals this week!  We are, however,  going to have a nice family Valentine's dinner tonight!

Here is the dinner plan:

Monday - Ribeye steaks, garlic mashed potatoes, carrots, crescent rolls
Tuesday - Girl's dinner out
Wednesday - Spaghetti with meat sauce, green beans, bread
Thursday - Slow Cooker Santa Fe Chicken, rice
      
Recipe:  2 cans corn, drained (subbing hominy)
                     1 can black beans, drained (I make my own from dried)
                     1 small jar salsa (whatever kind you prefer)
                     8 oz. cream cheese
                     chicken breasts, uncooked (subbing turkey breast)
Mix corn, beans and 1/2 salsa in bottom of cooker.  Top with chicken.  Cover with remaining salsa.  Cook on high 5-7 hours.  Remove chicken and shred.  Return to cooker with cream cheese.  Continue cooking 5-10 min. or until melted.  Serve with rice or tortillas. 
             
Friday - Popcorn shrimp, bacon/cheddar potato wedges, peas
Saturday - husband working - eat from the freezer!
Sunday - sandwiches or leftovers
